Coffee shop: future forecasting

We worked with French bakery Délifrance to create a headline-worthy report on the future of cafes and coffee shops. We devised questions for a nationally representative survey to understand current and future consumer behaviours around coffee shops and bakery, and contributed our expert take on what the findings mean for this insightful report.

Délifrance develops frozen and ready-to-bake products for food service providers, independent bakers, retailers, and cafes in 100 countries. They wanted this report to position them as an authority on future trends, and help Délifrance customers make informed choices for bakery within the coffee shop sector.

The study included a poll of UK consumers who regularly buy food from a café or coffee shop, which revealed that:

  • 9% visit cafés and coffee shops every day.

  • 58% visit cafés and coffee shops at least weekly.

  • Food is the most important factor when choosing a coffee shop (62%), followed by value for money (57%) and convenience (56%).

  • 92% of consumers are open to trying somewhere new.

  • Sandwiches (including wraps and paninis) are the most popular food in coffee shops (72%), followed by sweet bakery (64%) and savoury bakery (62%).
